Chocolate Chip Cookie Dough Cheesecake Bars

According to the Shenandoah Education Association Scholarship Cookbook 2007, the following recipe is Kathy's Chocolate Chip Cheesecake.

After reviewing the recipe, I have renamed these Chocolate Chip Cookie Dough Cheesecake Bars. Because really, the longer the name, the better the game. ;)

Here's the recipe:
Chocolate Chip Cookie Dough Cheesecake Bars
Your favorite choc. chip cookie dough*
2 pkg. cream cheese - softened
2 eggs
1/2 cup sugar
1 tsp vanilla

  • Put 3/4 of your cookie dough in a sprayed 9 x 13 pan. Press into the pan. Beat the cream cheese, eggs, sugar and vanilla. Pour over the cookie dough. Drop remaining cookie dough by teaspoon fulls on top of the cream cheese mixture.
  • Bake in 350 degree preheated oven for 30-40 minutes.
  • Cool for 20 minutes, then move to fridge to set overnight (or a few hours). Wet the blade of a knife with hot water (and keep blade clean) to make clean cuts through these bars.
  • Eat like you don't know what a treadmill is.

*Chocolate Chip Cookies
3/4 cup crisco (1/2 crisco, 1/2 butter)
1 1/4 cup sugar
1/8 cup molasses
2 TBSP milk (heavy cream, buttermilk)
1 TBSP vanilla
1 egg
2 1/4 cup flour
1 tsp salt
3/4 tsp baking soda
1/2 tsp baking powder
1 cup milk chocolate chips
1 cup semi sweet chocolate chips

Cream crisco, butter, sugar, molasses, milk and vanilla; beat in egg. Add salt, baking soda, baking powder, and flour; combine until blended. Stir in chocolate chips. [stop here if using this recipe.. if making chocolate chip cookies.. Drop by rounded teaspoon fulls onto greased baking sheet. Bake in 375 degree preheated oven for 8 - 12 minutes. Cool and enjoy]
